Made eggplant parmesan, zucchini fries, and cheese balls with Veronica last night. So delicious. I mean, eggplant parm is pretty easy: sweat, coat, fry, bake. So simple. The only difference with ours was that we made "meat" sauce with the rest of my vegetarian ground beef. It was also Vero's first time having eggplant parm, and she really liked it, so suck it.
It was also our first time making zucchini fries, and they turned out amazing:
  • 2 zucchinis, cut into "fries"
  • 1 cup crumb mix (equal parts grated Parmesan, breadcrumbs, Panko)
  • 1 egg, beaten
  • salt to taste
Coat each piece of zucchini with egg then completely cover with crumb mix. Place on baking sheet (without frying). Bake at 400 degrees F for 30 min (we just threw it in with the eggplant parm). Let cool, salt, eat. Yummerz.
We also made cheese balls. Just got a box from Shaws in the Latin America section. These ones were Brazillian, so they were a little chewier than the ones Vero usually makes at home, but still delicious. Chelsea and Rachel liked them too. Goodie.

Yum yum yum. I'm on a roll with trying to cook new things.
